Don't hold back on the foreigners. Give them the hottest dishes. You have to make sure they go home and tell their friends, so that they can come and try it.
If you do it that way make sure the person eating signs a waver first. That "what have I gotten myself into" look on their face when they sign it is going to be priceless

Sorry, I realised none of my about me stuff was filled out lol. Spicy is always good in my book. Is it spicy as in "Wow..ok..there is some flavor there. Or is it spicy as in your eyes and your nose will cry
